I met my best friend in grade four and I won’t tell you how long ago that was, but it was long enough that Jasmine is like a sister to me now. We cannot go more than a week without calling each other and long before the internet was invented, we wrote one another letters. We probably invented the term BFF. There are few people I can stand in the kitchen, because it’s often easier to just do something yourself than explain to your hungry guests how and what to chop or where to find the salt. Working in my tiny cabin kitchen, Jasmine is more than welcome, and we cook and bake every meal for our kids together when we’re here. Last week, she cooked up a hearty and easy Corn Chowder. If you are cooking this for kids who won’t eat onions – just peel the onion, leaving it whole, and pop the entire thing into the soup while it cooks. Remove it before serving and your kids will never know. Make this delicious soup tonight (use fresh corn if it’s in season).
